and Provolone Cheese. Broiled and served on a Bed of Baby Spinach and Walnut

Sweet Potato Crusted Salmon
Pan seared, oven baked and served with a grainy Dijon and dill chimichurri
over a roasted tomato and spinach quinoa.
Spaghetti di Mais Margherita
Gluten Free Corn Flour Pasta tossed with Oven Roasted Vine Ripe Tomatoes and
Leeks in a Roasted Garlic Olive Oil. Finished With Shredded Basil, Baby
Arugula and Buffalo Mozzarella.
Mango Barbecue Pulled Pork Sandwich
Slowly Braised Pork, Shredded and Basted with a Mango Barbecue Sauce. Served
warm on Toasted Egg Bread with an Avocado Dressing and Shaved Red Onion with
a side of Yucca Frites and Chipotle Ketchup

Pollo Rellenos
Chicken Supreme stuffed with a Roasted Corn, Black Bean and Queso Blanco
Salsa. Coated with Tomato, Ginger and Chili Jam then Braised in Tomatillo
Sauce. Served with a warm Mango Vinaigrette, Spinach and Quinoa Salad.
Roasted Pork Loin
Pork Loin Rubbed with our Signature Italian Spice Blend, and Oven Roasted.
Served on a bed of Wilted Greens and Roasted Root Vegetable Medley, then
dressed with a Plum and Brandy Reduction.
