About Pilot Coffee Roasters
We are a specialty roaster and café with a passion for Direct Trade partnerships, coffee education and excellent customer service. In our cafés, we offer a wide range of specialty coffees drinks, freshly baked goods, retail coffee beans, brewing equipment and more.
How and why did you decide to pursue your business?
With a passion for great coffee, Pilot Coffee Roasters was founded in 2009 with the goal of introducing specialty coffee to Toronto. With our first location and original roastery located in Toronto’s Leslieville neighbourhood, Pilot was built around the core values of sourcing ethical, Direct Trade coffee and building transparency in the process from farm to cup.
What are you most passionate about in your business?
We want our coffees to reflect the complex factors that make them special, from the varietal of the bean, to the climate, soil and altitude of the growing region, to the care and skill of the farmer. That's why we are so passionate about Direct Trade coffee sourcing. Through this philosophy, we source exceptional coffee by working closely with coffee farmers and regularly travel to the coffee’s origin. The truth is, we would be nowhere without the skilled effort of the farmers and the workers producing high quality specialty coffees to share through the roastery.
What do you LOVE about Downtown Oakville?
We love just how vibrant and diverse this town is. People here are eager for experience and have a keen taste for specialty – whether it’s Oakville’s amazing restaurants, bars or clothing boutiques. Our cafés offer some of the world’s best coffees, and the open-concept design builds connection between barista and customer. We share our passion for coffee on a daily basis, and I think it’s an experience that Oakville will appreciate.
Tell us something about yourself that might surprise others
Before we were Pilot Coffee Roasters, we were Te Aro Roasters. This is a nod to the hometown community of Owner, Andy Wilkin, who's originally from New Zealand!
